Tierra Colorada Gastro is the restaurant that put Paraguay on the world culinary map. Under the leadership of chef Rodolfo Angenscheidt, who trained in the kitchens of Gordon Ramsay, Michel Roux and Martín Berasategui, this restaurant located on Avenida Santísima Trinidad was the first in the country to enter the Latin America's 50 Best Restaurants list, currently positioned among the best 50 in the region. The concept is honest and sincere Paraguayan cuisine that celebrates local ingredients without artifice: 28-day grass-fed aged Paraguayan beef, river surubí served with moringa herbs and orange, cassava in all its expressions, and desserts that recover ancestral flavors. The wine cellar is carefully selected and service is at a high level. Forbes Paraguay has crowned it as the best restaurant in Asunción. For foreigners who want to understand the true flavor of Paraguay in a fine dining setting, it is the most important table in the city. Reservations are strongly recommended as the venue is small and fills up quickly.
